I give Cathal one of my wheat free and dairy free muffins, a home-made wheat and dairy free scone, some fruit, and a soya yoghurt. Hey Presto! One happy little boy. The muffins and scones can be made in advance and frozen, so you have them ready to de-frost from the night before you need them.
