When you can’t immediately reach for a loaf of wheat bread to make sandwiches for your family because they have food allergies, you have to think of alternatives for the lunchboxes.

I give Cathal one of my wheat free and dairy free muffins, a home-made wheat and dairy free scone, some fruit, and a soya yoghurt. Hey Presto! One happy little boy.  The muffins and scones can be made in advance and frozen, so you have them ready to de-frost from the night before you need them.
