Allergy Free Coleslaw
1/2 head of white cabbage shredded,washed and dry with kitchen towel.
1 carrot peeled and grated
3 spring onions trimmed and chopped very small
2 sticks of celery washed and chopped very small
1/2 eating apple cored and cut into matchstick size add a squeeze of lemon to stop going brown.
1tbsp fresh parsley chopped
1tsp smoked paprika
salt and pepper to taste
3tbsp dairy free, egg free, gluten free and wheat free mayonnaise( I use a brand called “Kelkin”)
Place the white cabbage into a bowl add the carrots,spring onions, celery, apple, parsley, salt and pepper and mix it well.
Just before you serve add the smoked paprika and the mayonnaise and mix well and serve. Great with any meat from the BBQ.
