Allergy Free Rainbow Cookies

These are so much fun to make. Great for a rainy day all my children love making them. They are perfect for childrens parties. As always they are wheat free, gluten free, dairy free, egg free and nut free.

Ingredients
200g gluten free and wheat free plain flour(I use “Doves Farm”)
75g caster sugar
1tsp xanthan gum
115g dairy free margarine (I use “Pure” sunflower or soya
Food colouring
Sprinkles (I use “Dr Oetker”)

Method
Sieve all the dry ingredients into a mixing bowl. Rub in the margarine then knee the dough with your hand until it comes together. Cut the dough into 3 or 4 parts. Add the food colouring to each part and knee it in. Then place all the dough into the fridge for at least 30 minutes.
Pre-heat the oven to 170 degrees celcuis (Fan). Take the dough out of the fridge then, take a little piece of dough and shape it into a semi-circle then roll anoyher colour in your hands like a snake and wrap it round the circle. Repeat this until you have a rainbow. Bake in the oven for 10 to 12 mintues.
When baked place on a wire rack. To add the sprinkles brush on some honey or jam and pour the sprinkles on to the honey or jam to make them stick.
