Allergy Free Wraps
200g gluten free and wheat free plain flour(I use Dove’s Farm)
40g tapioca flour
30g potato flour( NOT POTATO STARCH)
2tsp wheat free and gluten free baking powder
1tsp xanthan gum
75g dairy free margarine(I use Pure sunflower or soya)
125g boiling water
Sieve all the dry ingredients into a mixing bowl. Rub in the dairy free margarine into the flour mix until it looks like crumbs.
Add the water slowly (you don’t want it too wet it needs to be a nice soft dough)bring it together with a wooden spoon.Put some oil on your hands and roll the dough in your hands then, place it back in the bowl and cover with clingflim leave to one side for 10 minutes.
When the dough is set for 10 minutes kneed it gently( do not over work it). Roll the dough in your hands about the size of a golf ball then, using a rolling pin roll out the dough as thin as you can(I do this between 2 sheets of clingflim so I don’t have to add more flour) When ready place on a very hot heavy based pan they will cook very quickly when you see it start to bubble turn it over for about 11/2 minutes. Place them in a clean tea towel while you cook the rest.
