Allergy Free Lightly Spiced Chicken with salad
Ingredients. For the chicken..
2tsp smoked paprika
10 chicken thigh
1tbsp olive oil
salt and pepper
Ingredients. For the potatoes..
1 bag of baby new potatoes 1.5kg
3 cloves of garlic
2tbsp olive oil
3 sprigs of thyme
Ingredients. For the summer salad…
2 heads of cos lettuce ( you could use Iceburg lettuce)washed and chopped in big chunks.
2 spring onions chopped
1/2 red and yellow peppers cut in 1/2 then slices
10 to 12 cerry tomatoes cut in 1/2
1/2 cucumber sliced
10 green and 10 red grapes cut in 1/2
For the dressing…
1 very small clove of garlic
Salt and pepper
3 sprigs of thyme
2tbsp extra virgin olive oil
1tbsp lemon juice
Pre-heat the oven to 220 degrees celcius(Fan).
Firstly mix the cunin, turmeric and paprika in a bowl then, take the chicken thigh and place them in a roasting dish add the salt, pepper and oil. Rub the spice mix into the chicken leave to one side and get the potatoes ready.
Place the bag of potatoes into a roasting dish crush the garlic and add it to the potatoes along with the oil, thyme(you could season with salt and pepper if you want I don’t because its for the whole family) toss the potatoes with your hands then, cover with tinfoil.
Put the chicken and potatoes into the oven together for 35 minutes after 20 minutes take the tinfoil off the potatoes.
Meanwhile place all the ingredients into a bowl and toss them; easy!! For the dressing put the garlic, thyme, salt and pepper into a pestle and morter and crush it then, add theoil,honey and lemon juice and mix well.
To serve place two chicken thigh add some potatoes and salad then, drizzle some salad dressing over the salad.
