Allergy Free Lime and Coconut Biscuits

These tasty little biscuits are gluten free, wheat free, dairy free, egg free, and nut free. I hope you like them.

Ingredients:

225g dairy free butter

125g caster sugar

Zest of 1 or 2 limes

2 tsps of lime juice

35g dessicated coconut

375g gluten and wheat free plain flour

1 tsp xanthan gum

Preparation time: 10 minutes

Cooking time: 15 minutes

Makes 30-35 biscuits

Method:

Preheat the oven to 180 degrees (fan).

Cream the butter and sugar together in a mixing bowl. Add the lime zest, juice, and coconut, and mix well. Sieve the flour and xanthan gum and mix again. Roll the dough in your hands, into little balls, about 2.5 cms in diameter.

Lay the balls of dough on a baking sheet and press them with a fork. This gives a nice effect on the top of the biscuits.

Bake in the oven for 15 minutes. When baked, let them cool on a wire rack. Enjoy 🙂
