These are so tasty and easy to make I love the coconut it give another texture to the cookies.
250g gluten free oats blitzed
85g self raising gluten free flour
25g sorghum flour (or buckwheat)
100g light brown sugar
190g dairy free margarine
35g desiccated coconut
Green and orange food colouring
Pre-heat the oven to 180 degrees fan.
Place all the ingredients into a large bowl and mix with a electric hand mixer, just before it comes together half the mixture add the food colouring to each mixture and mix until it comes together.
Roll out the dough between 2 sheets of clingfilm and cut out the cookies I cut 3 hearts and made a shamrock.
Place in the oven for 12 minutes, when baked let them cool on a wire rack.
