Allergy free Barnbrack
This is a very moist barnbrack . It is so easy to make.
50g mixed peel (I make my own , it makes a great differance)
1 large apple ( peeled, cored and grated)
220 ml cold tea
200g soft light brown sugar
250g gluten&wheat free self raising flour
1/2tsp mixed spice
Metho1/. Place all the fruit into a large bowl with the tea and soke for 2 hours or over night.
2/. Pre-heat the oven to 170degrees. Grease and line a 6″ springform tin
3/. Mix all the dry ingredients together and fold in the fruit . Pour into the prepared tin and bake for 1 to 1 hour 20 minutes. Check it after 1 hour and then every 5minutes , when the skewer comes out dry it’s cooked.
