Summer fruits cordial

Once you make this you won’t go back!!


This is a very simple and very nice cordial that is not too expensive. I use frozen berries in this recipe and they work really well.

Ingredients

500g of frozen summer berries(Aldi’s for 1.99 euros)
800g caster sugar ( about 1 euro)
1 lemon (30 cent)
1ltr water
15g citric acid ( it costs 5 euro for 50g so for this recipe about 1.50 euros)

Total cost : 4.79 euros for about 2ltrs of cordial

Method

Place the fruit into a large saucepan, add the sugar then add the zest of the lemon and a good squeeze of juice and pour in the water stir till the sugar is dissolved.
Then put on the heat to high under the saucepan to bring it to the boil then turn it down and let it simmer for 30 minutes . Turn the heat off stir in the citric acid and let it cool till nearly cold.
Strain it through a muslin cloth or a fine sieve Then pour it into bottles and store in the fridge.
Once you try your own you’ll never go back to the shop bought one!!!!
