Quick and Tasty Allergy free muffins


The smell in the kitchen while these fab muffins were being cook is great, it really smells like Christmas. These are so easy which make them great for Christmas morning!!!

Ingredients

150g soya or sunflower margarine
100g caster sugar
50g dark brown sugar
3tbsp apple puree
3tbsp soya or coconut milk
35g desiccated coconut
150g allergy free mince meat (or mixed dried fruit)
125g gluten and wheat free plain flour
25g sorghum flour
25g coconut flour
2tsp gluten and wheat free baking powder
1/2tsp mixed spice (optional)

Method

Pre-heat the oven to 180 degrees fan.
Place the margarine and sugar in a bowl and cream together then add the apple and the milk and mix well.
Put the coconut, mince meat and sieve in the dry ingredients and mix well.
Spoon the mixture into the muffin tin and bake in the oven for 15 minutes. When baked lay them on a wire rack to cool.
Makes about 12 muffins
Prep. time 10 minutes
Bake time 15 minutes
