Allergy free gingerbread house

So much fun making this!!!


This is so much fun and your kids will be so impressed with it, even my 9 year old was impressed. It is the best gingerbread I have made yet. You can’t tell the difference between this and an non allergy version.

Ingredients

300g dairy free margarine
120g caster sugar
120g soft dark brown sugar
225g agave syrup or golden syrup
750g gluten and wheat free plain flour(I use Dove’s Farm)
1tsp baking powder
11/2tsp xanthan gum
2tsp bicarbonate soda
3tsp ground ginger
1tsp cinnamon

For putting the house together and decoration

2oog dairy and gluten free chocolate melted or icing sugar with water mixed into a thick paste.
2 packets white chocolate buttons gluten and dairy free
2 packets chocolate buttons gluten and wheat free
2 packets jellytots
50g desiccated coconut + green food colouring for the grass

Method

Melt the margarine in a heavy based pan with the sugars and the syrup till all dissolved together.
Sieve all the dry ingredients into a large bowl and pour in the wet ingredients and mix well for a minute on a medium speed. Knead the dough for a minute or so then wrap it up in clingflim an put it in the fridge for 30 minutes.
Pre-heat the oven to 180 degrees fan. Roll out the dough on a lightly floured board to about 5mm then lay the template on the top and cut around it with a sharp knife lay it on a baking sheet and re-peat until all sides are cut out. Bake in the oven for 15 to 18 minutes till the gingerbread is firm. When the gingerbread comes out of the oven place the templates on top of each piece and cut around it again, it may have swelled in the oven. Cut out the door and windows at this point also.
Go back to the dough and make the fence if you want to have one and also cut out your men and women, bake them in the oven for 12 to 15 minutes.
melt the chocolate in a bowl oven a pan of hot water, when melted put chocolate along the sides of the house and stick them together use cups or something like it to hold the wall up leave it to set for 20 minutes or so till the chocolate is hard.
Brush the board around the house with warm jam and then sprinkle it with the green desiccated coconut to make grass, leave a gape for the path.
When the walls are dry put the melted chocolate on the roof and fix it to the house leave it for another 10 minutes or so. Then decorate it using the melted chocolate to stick the sweets.

  1. Can the agave syrup be replaced with something like maple syrup?

    • Hi Sarah, you can use golden syrup if you want to use maple syrup a bit less or a bit more flour maple is runnier than the other two. Hope this helps. I hope you enjoy making this as much as we did!!!
