Courgette(Zucchini) and Potato Rosti
These are so tasty and so easy. These can be cooked and frozen, for a tasty and quick supper take them out and cook from frozen for about 15 to 20 minutes yum! yum!
We went out to the garden the other day and found these Gaint Courgettes so the quest was on to find something to make with them. That is why I came up with this easy recipe!! I hope you enjoy it…
1kg courgette grated and all the moisture squeezed out
1kg potatoes grated and all the moisture squeezed out(I leave the skins on)
2 cloves of garlic grated
A good handful of fresh herbs chopped( I like chives, thyme and oregano)
Salt and cracked black pepper
Freshly grated nutmeg (optional)
Pre-heat the oven to 190 degrees Fan. I like to cook them in the oven they are healthier, you can cook them on a pan on a medium heat with olive oil.
Place all the ingredients into a bowl and mix with your hands is best. Then mould the Rosti with your hands you should get about 10 Rosti . Place them on a oiled cooling rack over a roasting tray this gives them an even heat while cooking which makes them lovely and crispy. Bake in the oven for 15 to 20 minutes just when they are nice and brown on top.
