Curry in a pumpkin !!
This is so impressive I was a hero in our house when I brought this to the table!! This is a great dinner party dish.
2tbsp curry paste
1 onion chopped small
2 cloves garlic grated
4 chicken breasts cut into 2cm chunks
200ml chicken stock
6 mushrooms sliced
peppers deseeded chopped
1/2 courgette cut in half and sliced
1 can of coconut milk
Salt and pepper
1/. Pre-heat the oven to 190 degrees. Clean out your pumpkin. Sprinkle salt and pepper inside the pumpkin and brush on some oil. Wrap the bottom of the pumpkin with tin foil place it into a roasting dish pour in 2 cups of water (do not go over the tin foil) put it into the oven for 20 minutes with out the lid.
2/. Place a pan on a medium heat, add the oil and the paste cook for 2 minutes, add the onion cook for 3 minutes. Then add the chicken and garlic, cook for 5 minutes.
3/. Pour in the stock, add the vegetables and coconut milk and season, bring to the boil.
4/. Take the pumpkin out of the oven, pour the curry into it and put it back in the oven to cook for 30 minutes.
Serve with boiled rice.
