Mini Pizza !!!
It is so hard making healthy lunches for school that your children will eat!! It is so much harder when they have food restrictions. That is why I came up with these little tasty bites they are so tasty and so easy. All my kids brought these little pies to school and were a great hit.
For the base I use the wraps just cut them to fit your mini pie tins(I use muffin tins) you can find the recipe @ https://cathalscookbookallergyfree.com/christmas/allergy-free-wrap/
1 small onion peeled and chopped
1 clove garlic grated
6 tomatoes peeled and chopped(you can use canned)
2tsp brown sugar
Salt and pepper
2tbsp fresh basil chopped
1/3 courgette chopped small
2 spring onions chopped small
6 mushrooms chopped small
1/2 red pepper chopped small
Salt and pepper
100g vegan cream cheese
Pre-heat the oven to 170 degrees fan. Line the tins with the wraps.
To make the sauce place a pan on a medium heat add the oil, onion and garlic cook for 3 minutes. Then add the tomatoes, sugar, salt and pepper cook for a further 8 to 10 minutes till the tomatoes reduce. Add the basil then blitz it with a hand blender until smooth.
Put another pan on a medium heat add the oil, onion, courgette and mushroom cook for 6 minutes and then add the red pepper cook for 3 minutes and then season well.
To assemble spoon some of the tomato sauce into each pie then add a spoon of cream cheese and finally add the vegetables. Place them in the oven for 10 minutes.
These little tasty pizza can be eaten hot or cold.
