Raspberry, Pear And Vanilla Jam…
I love making my own jams and it is not as hard as you think. We am so lucky that we are surrounded by some of the best fruit in the world so we don’t have to go far for our ingredients. This makes it cheaper and that can only be a good thing!!!
500g raspberries fresh or frozen
500g pear weight after peeling and coring then chopped
juice of 1 lemon
1.3kg caster sugar warm it in the oven (I don’t use jam sugar)
3tsp vanilla extract
Place the raspberries, pears and water into a large saucepan and cook on a medium heat for about 10 minutes until the pear is soft then mash with a potato masher.
Warm the sugar in the oven. Add the lemon and sugar and stir to dissolve the sugar boil rapidly for 15 to 20 minutes, then stir in the vanilla extract. Wash your jam pots in soapy water and place them in the oven on a tray this is to sterilise them.
To test if your jam is set place a plate in the freezer for 10 minutes then, take it out and put some jam on leave it to cool if it sets the jam is ready.
Take the jars out of the oven and spoon the jam in place on the lid straight away and it will seal.
This will make about 4 jars.
