Summer Fruit Jam
This is so simple only 3 ingredients, it only takes about 30 minutes. I don’t like jam sugar, I don’t like the taste of the jam, so I use caster sugar. You could also use fresh fruit, just add 50ml of water to stop them sticking.
Makes : 3 jars
Cooking Time : 30 minutes
650g caster sugar
600g frozen mixed summer fruits
Juice of 1 small lemon
1. Pre-heat the oven to 190 degrees. Put the sugar into a heatproof dish and place it in the oven for 10 minutes.
2. Put the fruit into a large saucepan, add the lemon juice. Put it on a medium heat and let it cook.
3. Take the sugar out of the oven, and pour it into the fruit stir to dissolve the sugar. Then turn up the heat bring to the boil, and let it boil for 15 minutes. Stir a couple of time so it don’t stick( be careful it might splatter).
4. To test the jam is ready, put a plate in the freezer. Take out the plate and put some jam onto it, leave it to cool. Push the jam with your finger if it wrinkles its ready.
