The Best Dairy Free Cream Yum!

This is so simple, it only has 2 ingredients. I love scones with jam and cream it is one of my favourite things and now this is the way I eat it. It is one of Cathal’s favourite treats now, he is just like his mother!!!

Ingredients

1 can coconut milk (full fat)
1tbsp honey

Method

When you buy your coconut milk place it in the fridge(I always have 2 or 3 cans in the fridge) it needs to be very cold about 2 days in the fridge.
Take the can out of the fridge open the can don’t shake the can. Take the hard milk off the top and place it into a bowl with the honey and mix with a hand mixer it will stiffen up very quickly.
That is it simple!!
It will last in the fridge in an airtight container for 4 days. when you take it back out of the fridge give it a stir.
